These Banana Churro Waffles are easy, tasty snacks ready in under 20 minutes with a classic churros taste coated with crunchy sugar and sweetened with ripe bananas.
I love churros but when I have too many ripe bananas and also don’t feel like frying my food, I make banana churro waffles. It’s an alternative to making my other ripe banana recipes, such as my Eggless Banana Cake, Banana Bagels, or Banana Monkey Bread. They have a great churro taste in a banana waffle shape.
The recipe uses only 3 ingredients, and it’s impossible to fail with a good waffle maker! So go make your easy churro waffles!
Ingredients and Substitutions
- Self-Rising Flour – Since this is just a combination of all-purpose flour with baking powder, you can make it at home. You can also use cake flour or bread flour with baking powder.
- Ripe Bananas – The riper the bananas, the sweeter your churros will be. If you use bananas not ripe enough, you might need to add sugar to reach the right sweetness.
- Almond Milk – Almond milk makes the churros crispier but other plant-based milk also work fine.
Optional
- Sugar – I use sugar to balance the sweetness of my churro waffles if the bananas are not ripe enough. I also use it to make my cinnamon sugar coating.
- Cinnamon – for the classic churro coating.
- Vanilla – for even more taste!
How to Make these Banana Churro Waffles
Making these banana churro waffles is quite easy, as you can see in the recipe card further down, but to help and guide you, here are some shots of the main steps!
Tips and Tricks
- The recipe is oil-free and therefore the waffles need to bake for 6-7 minutes to get really crispy.
- For them to remain crispy for longer after baking, swap 1/4 cup of the almond milk for oil like canola oil. Also add 1/4 cup sugar in the batter for crispier waffle churros.
- Don’t pour more than 1/3 cup of batter per waffle. They will cook faster, be thinner, and crisp more!
- You can add ultra-thin slices of banana on top of the batter, then cover them up with more batter to stuff the churros with pieces of banana. This taste good but it’s tricky, as the banana can stick to the waffle iron.

Banana Churro Waffles
Ingredients
- 2 cups Self-Rising Flour - note 1
- 2 Ripe Bananas - 1 cup mashed banana
- 1 ¾ cup Almond Milk - note 2
Optional
- 1 Banana - cut into thinly slices that you can almost see through
- 1 teaspoon Vanilla Extract
- ¼ cup Sugar - note 3
Instructions
- Before you start, decide if you want to use oil or not. The oil makes the waffles crispier. If so, use 1 1/2 cups of almond milk and 1/4 cup of oil instead of 1 3/4 cup of almond milk.
- In a large mixing bowl, whisk self-rising flour with mashed banana and milk. The batter should be thin and runny—that's normal. Whisk in the optional ingredients.
- Prepare a bowl with oil and a wide shallow plate with the cinnamon sugar. Set aside.
- Warm a waffle iron to high heat and grease it generously with oil.
- Add 1/3 cup batter, if you like, add super-thin slices of bananas and 2 tablespoons of batter on top to cover the banana slices so they don't get in contact with the waffle irons. Cook the waffles for 6 to 7 minutes until ultra-crispy and golden.
- Cut the waffles into sticks on a chopping board with a long sharp knife.
- When hot, immediately spray or brush with oil and roll them into the cinnamon sugar.
- Eat immediately as they soften very fast. If you don't eat all the waffles now, don't coat them with sugar so you can rewarm them in an air fryer or a warm waffle iron, and coat them just before eating.
- Rewarm in an air fryer for a few minutes at 350 °F (180 °C) to crispy.
