This Shaved Banana Ice Cream is a no-dairy, no-machine ice cream alternative you can make with bananas and a cheese grater. It’s easy, healthy, and deliciously surprising!
I love making frozen desserts that are different, far from the classics, like my Banana Pudding Ice Cream or Chunky Monkey Ice Cream Bites. This shredded banana recipe is even more surprising.
It’s a really easy recipe to put together and it makes a refreshing summer dessert.
Ingredients and Substitutions
- Bananas: The bananas should be large, ripe, and peeled before freezing. Ripe bananas are naturally sweeter and will provide the best texture.
- Dark Chocolate Chips: Choose high-quality dark chocolate chips that are dairy-free. If you prefer, you can use vegan milk chocolate chips or white chocolate chips. For a sugar-free option, go for stevia-sweetened chocolate chips.
- Coconut Oil: This helps to melt and smooth out the chocolate. If you don’t have coconut oil, you can use another neutral oil like avocado oil, but coconut oil solidifies better when chilled.
- Coconut Chips: These add a nice crunchy texture and a hint of coconut flavor. If you’re not a fan of coconut, you can use toasted almond slices or chopped nuts instead.
- Crushed Peanuts: They add a salty contrast and crunchy texture. For alternatives, try using crushed almonds, pecans, or hazelnuts.

Pour the magic chocolate on the shredded banana and add shaved coconuts with crushed peanuts.
Expert Tips
- Freezing Bananas: Make sure the bananas are thoroughly frozen before using. This will ensure they grate easily and provide the best texture.
- Grating Technique: Use the large holes of a cheese grater for best results. If the bananas are too hard to grate, let them sit at room temperature for a few minutes.
- Melting Chocolate: Melt the dark chocolate chips with coconut oil in short bursts in the microwave or over a double boiler to avoid burning.
- Texture Balance: Combine different textures by adding crunchy elements like nuts and coconut chips to contrast the smoothness of the shaved bananas.
Serving Suggestions
- Presentation: Serve the shaved banana ice cream in chilled bowls or glasses. For a fun twist, you can use hollowed-out fruit halves like coconuts or pineapples as serving bowls.
- Toppings: Drizzle the melted dark chocolate over the shaved bananas, then sprinkle with coconut chips and crushed peanuts. You can also add fresh fruit like berries or sliced kiwi for extra color and flavor.
- Pairings: Enjoy this treat with a glass of Mango Juice or a cold glass of coconut water. It pairs well with vegan shortbread cookies or a slice of vegan banana bread.
- Occasions: This recipe is perfect for a quick dessert on a hot day, a refreshing snack after a workout, or a healthy option for a family gathering.
