Peel the banana, then place it on a chopping board and, using a sharp knife, slice crosswise to make a slice of about 1/4 inches. I got 30 slices, 10 per banana.
Cover a large baking sheet or plate with parchment paper to fit your freezer width. Spray cooking oil on the paper. Set aside.
Place 15 banana slice on the baking sheet, cover each with one teaspoon of natural peanut butter then place another piece of banana on top to form a banana peanut butter bite.
Freeze for 15-20 minutes to firm up slightly.
In a microwave-safe bowl, melt chocolate chips and coconut oil. Set aside.
Remove the baking sheet from the freezer, grab one banana bite, and dip it halfway into the melted chocolate.
Return the dipped banana bite on the covered baking sheet and sprinkle chopped peanuts on the top.
Repeat until all the peanut butter banana bites are covered with melted chocolate.
Freeze again for an hour or until hard.
Store in the freezer in a airtight contaienr and eat frozen.
