Stir the chia seeds, mashed dragon fruits, and soy milk in a glass mason jar. You can add the optional maple syrup for more sweetness. Refrigerate to firm up for 20-30 minutes.
When the chia pudding has firmed up, prepare the yogurt layer by stirring yogurt and protein powder together.
Remove the chia pudding from the fridge and stir again if lumps of seeds have formed. Spread the yogurt layer on top and add a few extra pieces of chopped dragon fruit.
