Line a small baking sheet or plate with parchment paper.
On the prepared sheet, line the slices of banana next to each other in a row to form a rectangular shape. Make sure they stick to each other but don't overlap.
Spread fresh runny peanut butter all over the slices and sprinkle salted peanuts.
In a microwave-safe bowl, melt the chocolate chips and coconut oil for 30 seconds stir and repeat until fully melted.
Spread the melted chocolate evenly over the peanut butter layer.
Freeze the sheet for 2-3 hours until the bark is hard and easy to break into pieces.
Store in an airtight container in the freezer for up to 3 months.
